Hawaiian Stuffed Chicken Breasts

This is one the wife pulled directly off the Interwebs and we paired it with some garlic smashed potatoes and peas!  We would love to hear what you thought and how you made yours different!

Hawaiian Stuffed Chicken Breasts

  • 2/3 c. hot water
  • 2 tbsp. butter
  • 2 c. Stove Top in the canister chicken flavor stuffing mix
  • 1 (8 1/4 oz.) can crushed pineapple in syrup
  • 4 boneless skinless chicken breast halves,
    pounded 1/4 inch thick
  • 1 med. green pepper or red, chopped
  • 2 tbsp. brown sugar
  • 2 tbsp. vinegar
  • 1/4 tsp. ground ginger
  1. Heat oven to 400 degrees.
  2. Mix hot water and butter in bowl, stir in stuffing mix, pepper, half the pineapple and syrup.
  3.  Spoon stuffing evenly on chicken, roll tightly. Secure with toothpicks.
  4. Place in 9-inch square pan with any remaining stuffing in center.
  5. Mix remaining pineapple and syrup, sugar, vinegar, and ginger. Spoon over chicken.
  6. Bake 30 minutes or until thoroughly cooked.  Makes 4 servings.

    was this good? i think the stuffing and pineapple would be weird together

      It was def interesting! There was a lot of the pineapple, so that was a little over-bearing, and next time we will try a little less. But overall, a really nice change up to just oven-baked chicken. Gotta say that the Garlic Potatoes were OUT OF THIS WORLD!
