You Put WHAT On That Burger? (Buffalo Chicken Dip Burger)

Right off the bat I’m going to say I regret not having a photo of this burger because this burger looks as good as it tastes–and it tastes GOOD. My friends Erin and Mike (particularly Mike) have a standing request for me to bring my Buffalo Chicken Dip to any gathering, and I happily oblige. The dip is very much a basic Buffalo Chicken Dip (recipe will follow). Well, one night a party was winding down and another friend, George, went inside to put some solid food on top of what turned out to be hours beer consumption. He was inspired by the remnants on the buffet table, and, thus the Buffalo Chicken Dip Burger was born. 

For the dip you need: 

  • 8 ounce package of cream cheese, softened
  • 1/4 cup ranch dressing
  • 1/4 cup blue cheese dressing
  • 1/2 cup Frank’s Red Hot–or preferred Buffalo style sauce
  • 1/2 cup crumbled blue cheese (mozzarella may be substituted)
  • 2-3 cups of shredded rotisserie chicken (I feel very strongly about using rotisserie chicken for this)

**The amounts above are for a single batch but I generally make a double. For the double batch I generally use 1 whole rotisserie chicken (leave in skin for extra flavor) and double the amounts of the other ingredients.** 

Pre-heat oven to 350 degrees. In a deep baking dish, mix cream cheese, salad dressings, buffalo sauce, and cheese.  Stir until combined. Fold in chicken. Bake uncovered for 20-25 minutes. You can stop right hear and serve with a sliced baguette, pita chips, and/or carrots/celery. 

But, you just don’t want to stop with the just dip now do you? No. You don’t. 

Grill up a batch of burgers. Get some fresh buns and start building  your burger. Top each burger with a good amount of the chicken dip, sprinkle with some a little more crumbled blue cheese (or bleu cheese if you’re European), lettuce, and tomato.
