Hot and Hearty Cottage Pie

Ingredients:

Meat Filling:

  • Olive Oil
  • 1 pound ground beef
  • 1 large carrot (grated)
  • 1 large onion (finely chopped)
  • 1 cup corn
  • 1 cup peas
  • Fresh Rosemary
  • Fresh Thyme
  • 4 cloves garlic (minced)
  • Salt
  • Pepper
  • Worcestershire Sauce (abt 2 tablespoons, more if you like)
  • 1 small can tomato paste
  • 1 can diced tomatoes – drained
  • 1/4 to 1/2 cup Red Wine
  • 1/2 cup beef stock

Potato Mash:

  • 6-8 Medium Potatoes
  • 1/4 cup heavy cream
  • 3 1/2 tablespoons butter
  • Salt
  • Pepper
  • 2 Egg Yolks
  • 1/4 cup Parmesan Cheese + more later for the topping.

Directions:

  1. Skin potatoes and cut into cubes then place in boiling salt water for about 15 minutes.
  2. While potatoes are cooking, heat olive oil in a large pan, then add meat and brown into small bits.  Add the rosemary, thyme, and garlic and continue cooking for a few minutes.  Add carrots, onions, corn, and peas, stir and cook for an additional few minutes.
  3. Now add the Worcestershire sauce, stir, tomato paste, stir, diced tomatoes, stir, and red wine stirring and sweating down a few minuted more.  Finally add the chicken stock and cook for another 3 minutes.
  4. By this time the potatoes should be done.  Drain the potatoes and place in a large mixing bowl.  Mash the potatoes and add all the ingredients for the mash from above.  Using a hand mixer, mix the potatoes until the desired consistency (we like ours with no lumps).
  5. Scoop your meat filling into a deep casserole or other oven safe dish and then spoon the mash over the top.  Spread the mash over the top and then sprinkle a generous portion of Parmesan cheese over the top.  Bake into the oven at 400 degrees for 18-20 minutes to brown the potatoes and set the pie.

    Made this tonight for the family, followed your recipe to the “T” Well close, I got a little heavy handed with the wine and I left out the diced tomatoes. Absolutely wonderful!
