Whitney’s (Cavan’s wife) Meatloaf

I gotta admit my wife Whitney makes the best meatloaf that I’ve ever tasted. This has been about a 7-year project to perfect but now it’s as close to a perfect meatloaf you’re going to have and we’re happy to share with you all. 

  • 1 lb ground beef
  • 1 lb ground pork
  • 1/4 tsp of gelatin (The dry kind in the packet–this is optional but I highly recommend it as it results in a very moist meatloaf)
  • 1 egg
  • 1 ¼  cups of Italian bread crumbs
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 1 cup Ketchup
  • 1 cup honey
  • ½ cup Italian seasoning
  • 1 Tbs salt
  • 1 Tbs pepper

Mix the beef, pork, egg, onion, celery, 1 cup bread crumbs,  ½ cup of ketchup, ½ cup honey, Italian Seasoning, salt and pepper. Blend well (you have to use your hands for this—no other way)

 Form into loaf shape and place in glass casserole dish. Sprinkle remaining bread crumbs on top of loaf and drizzle remaining honey and ketchup on top of loaf. Bake at 375 for approx. 50 minutes. Serve with mashed potatoes and stewed red cabbage for the full A Christmas Story effect.
