Tomato and Mozzarella Cheese Sandwich

Very simple, summertime sandwich for that hold-me-over to dinner, or a afternoon snack after mowing the yard. (more elegant recipe to follow)

Simple ingredients:

Sliced Tomatoes

Shredded Mozzarella Cheese

Salt / Pepper

Basil

Balsamic Vinegar

Toast

Aioli or Mayo

On a cookie sheet, layout the sliced tomatoes.  Season with salt and pepper to taste, top with a generous mound of mozzarella cheese.  Broil in the oven until cheese is melted and slightly browned on top.

In the meantime, prepare some toast on bread of your choice (today’s was a whole wheat but a ciabatta would be GREAT).  Spread a thin layer of aioli on insides of both pieces of bread.

Put the tomatoes and cheese on the toast and sprinkle some basil on top, again to taste, drizzle on some balsamic vinegar.  Cover, slice diagonally and enjoy!

This also makes a great appetizer: remove the crust, cut sandwich into fourths, secure with a toothpick.
